Pasta Salad with Edamame and Shrimp
The original recipe called for spring peas, but I prefer the edamame.
ingredients
- Dressing:
- 1/2 cup red wine vinegar
- 4tbsp extra virgin olive oil
- 4 tsp spicy brown or Dijon mustard
- 1/2 squeezed lemon or more to taste
- 1 tsp salt
- 1/2 tsp pepper
- 4 garlic cloves, minced
- Salad:
- 3 (9 oz packages) fresh tortellini (see note)
- 1/4 lb cooked shrimp, chopped bite size
- 1 carton grape tomatoes, chopped
- 1/2 pkg already shelled, frozen edamame
- 1 small shallot, minced
- 1 large can sliced black olives

Whisk together the dressing and set aside.

Cook the tortellini according to directions and drain. Cook the edamame according to directions in microwave. Put tortellini in a large bowl and add the rest of the ingredients. Pour the dressing over, stir and refrigerate. Stir again before serving.
notes
I buy 3 different kinds of tortellini for a variety of colors and flavors. You can usually find this in the refrigerated cheese section. Edamame is with the frozen vegetables.
