Minestrone Soup with tortellini and sausage
ingredients
- 4 lg carrots
- 1 fennel bulb
- 2 lg potatoes - peeled and diced
- 1 green pepper-diced
- 3 medium zucchini-diced
- 1 1/2 cups sliced green beans
- 1 medium green cabbage-shred
- 1/3 cup olive oil
- 1 lg onion
- 5 cups beef stock
- 5 cups water
- 1 35 oz can of italian plum tomatoes
- 2 Tbs oregano
- 1 Tbs basil
- salt and pepper
- rind of chunk of Parmesan or Romano cheese
- 1 1/2 cups cannelloni beans- white kidney beans, drained
- 1 lb cheese tortellini
- 1 1/2 lb sausage, cooked , and sliced
- fresh fontina cheese

1. Heat oil and saute onion for 10-15 min

2. Stir in carrots and saute

3. Add fennel, potatoes, green pepper, zucchini and green beans. Stir in cabbage and cook 5 more minutes.

4. Add stock, water, tomatoes with juices and herbs. Bury the rind and heat till boiling . Reduce heat and simmer 2-3 hours. The soup will be thick

5. 15 minutes before serving stir in cannelloni beans and tortellini. Reduce heat to cook tortellini and stir to keep from sticking. Before serving add sausage.

6 Serve with fontina cheese
