Baked Vidalia Onions
ingredients
- 2 medium Vidalia onions, peeled
- 2 beef bullion cubes
- 1 T butter
- fresh pepper
- parsley
directions
Cut a thin slice of onion from both the top and bottom. Scoop out a 1" deep hole from the top of each onion. Place onions, top sides up, in a 2 quart microwave dish with lid. Add 1 bullion cube and 1/2 T butter to shallow hole in each onion. Cover with lid. Microwave 8-10 minutes until onion is tender. Garnish with parsley and fresh pepper.
