Parmesan Smashed Potatoes

ingredients

  • 3 lbs red potatoes
  • 1 tbsp salt
  • 1 1/2 cups half-and-half
  • 1/4 lbs unsalted butter
  • 1/2 cup sour cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 tsp black pepper

    Boil potatoes with salt in a 4 quart saucepan. Simmer and cover for 25 minutes. Drain.

    In a small saucepan heat half-and-half and butter.

    Beat the potatoes with mixer on low to break up. Slowly add the hot cream and butter, mixing on lowest speed. Fold in the last bit of butter and cream mixture by hand. Fold in sour cream, Parmesan cheese, salt and pepper. If the potatoes are too thick add more cream or milk.
