Warm Mushroom Spread
Ok, maybe we love shrooms a little more than other people...but maybe not! Here’s another good mushroom app to enjoy. Serve the spread with crackers, pita or bread...or all three!
ingredients
- 2 T Olive Oil
- 1/2 C Shallot (finely chopped)
- 3 Garlic Cloves (or 5, minced)
- 4 C Portabella Mushrooms (chopped)
- 4 C Shiitake Mushrooms (chopped)
- 1 C Madeira Wine
- 1/3 C & 1 T Fresh Parsley (chopped, divided)
- 1 t Dried Thyme
- 1 t Salt
- 1/4 t Pepper
- 1/3 C Sour Cream
- 1 1/2 t Balsamic Vinegar
- Bread
directions
Heat 1 T oil in a large pan over medium-high heat. Add shallots & garlic, sauté 1 minute. Add mushrooms, sauté for 5 minutes or until tender. Add wine, 1/3 C parsley, thyme, salt & pepper. Bring to a boil. Reduce heat & cook 15 minutes or until liquid is almost gone. Remove from heat, stir in sour cream & balsamic. Sprinkle with remaining parsley & serve with sliced bread.

This spread may be prepared ahead of time, but apparently it's best if it's only reheated one time.
