Herb Roasted Root Vegetables

ingredients

  • 4 medium carrots, peeled and cut crosswise into 1 1/2-inch thick slices
  • 8 oz brussel sprouts, halved
  • 2 large sweet potatoes, peeled and cut crosswise into 1 1/2 inch thick slives
  • 1/3 cup extra virgin olive oil
  • 1 tbls dried oregano
  • 1 tbls dried basil
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 tsp kosher salt, plus more to taste
  • 2 tsp freshly ground black pepper

    Position the rack into the center of the oven and preheat to 400 degrees.

    In a large bowl, toss the vegetables, oil and spices and toss to coat .

    Arrange vegetables evenly on a heavy baking sheet. Roast until tender and golden, stirring occasionally, about 35 minutes.

  • 4

    Season with more salt and pepper to taste.
