Herb Roasted Root Vegetables
ingredients
- 4 medium carrots, peeled and cut crosswise into 1 1/2-inch thick slices
- 8 oz brussel sprouts, halved
- 2 large sweet potatoes, peeled and cut crosswise into 1 1/2 inch thick slives
- 1/3 cup extra virgin olive oil
- 1 tbls dried oregano
- 1 tbls dried basil
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 2 tsp kosher salt, plus more to taste
- 2 tsp freshly ground black pepper

Position the rack into the center of the oven and preheat to 400 degrees.

In a large bowl, toss the vegetables, oil and spices and toss to coat .

Arrange vegetables evenly on a heavy baking sheet. Roast until tender and golden, stirring occasionally, about 35 minutes.

Season with more salt and pepper to taste.
