Mexican Mac and Cheese
ingredients
- 2 tbsp olive oil
- 1/2 cup diced shallots
- 3-4 pickled jalapenos minced
- 1/2 tsp dried Mexican oregano
- 1/2 tsp raw sugar
- 1 stick butter
- 4 cups whole milk
- 2 cups of ditalini or elbow macaroni
- 1 1/3 cups grated cheddar cheese
- 1 cup grated mild jack cheese
- 1/3 cup goat cheese

In a large ovenproof skillet, heat olive oil. Add shallots and jalapenos, stir. After 2 minutes add oregano. Sprinkle sugar over shallots and stir. Once shallots become caramelized, turn heat to low, add butter.

After 2 minutes, add milk and stir. Add macaroni. Turn heat to medium. Sprinkle in 1 cup of cheddar cheese, jack cheese and goat cheese. Stir for 30 mins.

Preheat oven to 350.

Remove skillet from heat and sprinkle the rest of the cheddar cheese on top. Put skillet in oven for 10 mins, until cheddar is lightly browned.
