Buttermilk Pecan Pralines
ingredients
- 3 cups sugar
- 1 cup buttermilk
- 1 teaspoon soda
- 1/2 cup light corn syrup
- 3 cups coarsely chopped pecans
- 2 tablespoons butter
- 1/2 teaspoon vanilla
directions
Combine sugar, buttermilk, soda, and corn syrup in a large saucepan and bring to the soft ball stage (234 to 238 degrees on a candy thermometer). Just before removing from heat, add pecans. Remove from heat, add butter and vanilla. Beat until mixture loses its gloss and holds its shape. Drop onto wax paper by mounds.
