Chicken Salad with Mango
ingredients
Salad- 2 pounds boneless chicken breast
- Water
- Salt
- 2 T fresh lemon juice
- 2 firm and ripe mangos, peeled and cut into bite-sized pieces
- 1 cup chopped celery
- 4 green onions, minced
- 1/2 cup roasted unsalted cashews, coarsely chopped
- 1 T cilantro, minced
- 1/4 cup plain yogurt
- 1 T mayonnaise
- 1 t curry powder
- 1/4 t cumin
- Salt and ground black pepper
