Mom's Rice Pilaf
ingredients
- 1 stick of butter
- 1 large onion diced
- 1-2 stalks of celery diced
- 2 carrots diced
- 1 1/2 cups of rice
- 3 cups of chicken broth
- 1 teaspoon of salt

Melt butter in a pan adn saute the onion for about 10 minutes. Add the rice and stir until rice is coated with butter.

Add remaining ingredients and bring to a rapid boil.

Cover skillet tightly, turn to low heat and cook without raising the lid for 20 minutes.

Remove the lid and fluff with a fork.
