Braciole
“watch for the toothpicks”
ingredients
- 2 pounds top round steak 1/4 thick cut into 4 x 6
- 1 cup chopped parsley
- 1/4 cup chopped basil
- 1 cup bread crumbs
- 3 tablespoon minced garlic
- 1 cup grated parmigiana reggiano
- salt pepper
- 1/3 cup of olive oil

Pound meat to tenderize it and make it thin (avoid holes)

Blend parsley and basil.spread on meat.

Mix breadcrumbs garlic cheese and seasonings.

Roll meat, tuck ends and secure with twine or the famous toothpicks.

Brown meat in olive oils over a low temperature and turn gently.

Usually left to soak in tomato gravy.
