ingredients

  • 2 oz smoked salmon, chopped

  • 1 Tbsp fresh chives, chopped
  • 2 Tbsp butter
  • 8 eggs lightly beaten
  • 3 Tbsp whole milk ricotta cheese
  • Salt and pepper to taste

directions

  • 1

Preheat broiler. In large bowl, beat together eggs, salmon, sour cream, chives, salt and pepper.

Heat butter in large nonstick ovenproof skillet over medium heat until foam subsides. Add egg mixture and cook, stirring, for about 1 minute. Egg mixture should be set on the bottom and still a bit wet on top.
