TIRAMISU
Tiramisu (Serves 8)
ingredients
- 250 gr./.55 lb. mascarpone cheese
- 150 gr./2/3 cup sugar
- 2 eggs
- 200 gr./.44 lb. lady finger cookies
- 1 cup Italian espresso coffee
- cocoa to decorate

Whip the sugar and egg yolks. Then add mascarpone cheese and go on mixing.

Apart beat egg whites until stiff and add them to the batter, being careful they don’t go flat.

Dip the cookies into the coffee and cover the bottom of a mould with them. Then cover with the mascarpone batter.

Put in the fridge for some hours and, before serving, sprinkle with cocoa.
