Stuffed Peppers
ingredients
- 3 medium green peppers cut in half
- 1 beef bouillon cube
- 1 cup hot water
- 1 6 oz can tomato paste
- 3/4 lb. ground beef
- 1/2 cup chopped onion
- 1/2 tsp. oregano
- 1/2 tsp. salt
- 1 clove garlic minced
- 1 cup cooked rice
- 1 cup shredded mozzarella cheese

Preheat over to 375 degrees.

Cut peppers in half and sprinkle with salt. Place in 2 qt. baking dish.

Dissolve 1 beef bouillon cube and tomato paste in water then set aside.

Cook beef, onions, and garlic together until beef looses redness. Drain and add rice, oregano, salt, 1 cup tomato paste mixture, and half of the mozzarella cheese.

Fill peppers and top with remaining paste mixture and cheese.

Cover and bake 45 minutes.
