Jenn S's Crockpot Bean Soup
ingredients
- 2 C. mixed dried beans (at least 7 different varieties - you can buy the 15 bean kind)
- 2 TB salt
- 1-2 Qt water (depending on how soupy you like it) I do about 1.5 Qt.
- 2 C. diced ham, OR sliced smoked sausage, OR beef summer sausage - that’s what I use.
- 1 sm onion, chopped
- clove garlic, minced
- 1 tsp. chili powder
- 1 28oz can diced/chopped tomatoes
- 1 TB lemon juice

Rinse beans; place in large kettle, cover with water, add salt, and soak overnight.

Drain beans

Add 1-2 Qt water (again -- depending on how you like it), ham/sausage, onion, garlic, chili powder, tomatoes, & lemon juice.

Cook all day in crock pot (less than 5 hours - I cook on high heat, if more time than that - I do low heat).
