Bean Soup
This goes great with grilled cheese sandwiches.
ingredients
- 4 cups dried beans (a mixture of different kinds of beans works great)
- 2 Tbsp. salt
- 1 ham hock
- 1 ball Bouquet Garni seasoning
- 1 large can undrained tomatoes
- 1 medium onion chopped
- 6 stalks celery, sliced
- 1/2 cup red wine
- 1/4 chopped parsley
directions
Wash and drain the beans. In a large pot, add the beans, 3 quarts water, salt, Bouquet Garni, and ham hock. Simmer covered 2 1/2 hours. Add tomatoes, celery, and onion. Simmer uncovered 1 1/2 hours. Add wine and parsley.
notes
I sometimes add chopped ham at the end of the cooking time. This makes a lot. Freeze leftovers for a quick meal on a cold night.
