Roasted and Pureed Cauliflower
Substitute for Mashed Potatoes
ingredients
- 2 heads cauliflower
- 1 tbsp. Olive Oil (EVOO)
- 4 cups whole milk
- 1 tsp. salt
- 1 tbsp. unsalted butter
- 1/2 bunch chives

Core and cut cauliflower into florets.

Pre heat over to 350 degrees.

On a cookie sheet spread 1/4 of the florets with the oil, season with the salt and bake until caramelized, about 25 minutes.

Meanwhile, combine cauliflower, milk and 1/2 tsp. of salt in a medium saucepan over medium heat. Bring mixture to a simmer, cover and cook until cauliflower is tender, about 20-25 minutes. Strain cauliflower from the milk mixture, reserving both. Transfer cauliflower to a blender. Add remaining 1/2 tsp. salt and butter to the blender. Add half the reserve liquid. Secure top of blender and puree mixture until smooth. If mixture is too thick, thin by adding some of the remaining liquid. Season to taste. Serve in a large bowl topped with the caramelized florets and chives.
