Thai Curry Salad with Turkey and Asian Pears
ingredients
Salad- 4 cups cooked turkey breast, cubed
- 1 cup bok choy cut into thin bias
- 1 cup finely chopped celery
- 1/2 cup finely cut carrot
- 4 T cilantro
- 4 T chopped green onion
- 1 cup diced Asian pears
- 2 T water
- 1 T fresh lemon juice
- 1 T chopped toasted peanuts
- 1 cup tofu
- 1 T soy sauce
- 1 T honey
- 1 T coconut milk
- 2 t green Thai curry
- 1 T rice vinegar

Toss the Asian pears with the water and lemon juice. Combine all the salad ingredients.

Combined all the dressing ingredients in a blender. Toss the dressing with the salad. Serve on a bed of greens or as a sandwich filling.
