ingredients

Salad
  • 4 cups cooked turkey breast, cubed
  • 1 cup bok choy cut into thin bias
  • 1 cup finely chopped celery
  • 1/2 cup finely cut carrot
  • 4 T cilantro
  • 4 T chopped green onion
  • 1 cup diced Asian pears
  • 2 T water
  • 1 T fresh lemon juice
  • 1 T chopped toasted peanuts
Dressing
  • 1 cup tofu
  • 1 T soy sauce
  • 1 T honey
  • 1 T coconut milk
  • 2 t green Thai curry
  • 1 T rice vinegar

directions

    Toss the Asian pears with the water and lemon juice. Combine all the salad ingredients.

    Combined all the dressing ingredients in a blender. Toss the dressing with the salad. Serve on a bed of greens or as a sandwich filling.
