CREOLE SAUSAGE FRITTATA

ingredients

  • 1 lb Creole Sausage (chicken sausage preferably)
  • 1/4 cup vegetable oil
  • 2 Cloves garlic, chopped fine
  • 1 Green pepper, diced
  • 1 Red pepper, diced
  • 2 Stalks celery, diced
  • 1 Medium onion, diced
  • 6 Eggs, beaten (or egg beaters)
  • 1/4 cup fresh basil, chopped
  • 1/2 Cup freshly grated Parmesan cheese
  • 2 Baking potatoes, peeled and diced
  • salt and pepper to taste

    Place diced baking potatoes into a saucepan to boil, until done. Meanwhile cut sausage into bite-size pieces. In a sauté pan heat the oil and cook the sausage till warm. Add the garlic, green and red peppers, celery and onion and cook them for about 5 minutes. In a mixing bowl, combine the boiled potatoes with the sausage and vegetables and add the eggs, basil, Parmesan cheese, salt and pepper.

    Pour into a lightly greased 9 by 12 inch casserole and bake at 375 degrees for 45 minutes; until the top is brown and the eggs are set all the way through. Cool until just warm
