Tomato Juice Cocktail
A Beattie family tradition, often served before holiday meals with cheese straws.
ingredients
- 1 quart tomato juice
- 1 tablespoon vinegar
- 1 tablespoon lemon juice
- 1 tablespoon honey
- 1 teaspoon salt
- 1 small stalk celery
- 1 medium onion
- dash of pepper
- 2 cloves
- 1/2 bay leaf

To make from scratch, add 2-3 cups of water to peeled tomatoes, chopped onions and celery. Add seasonings and cook together until onion becomes transparent. Run thorough sieve, pour in jar, and cool.

If you plan to can this mixture, use 4 times the recipe and put in jars to process 20 minutes.

To use recipe with ready canned plain tomato juice, just add ingredients to juice; let set overnight. Strain and serve cold.
