Grandma Bert's PRIZE Chocolate Cake

Grandma Berta won first prize with this cake in a 1978 Abraham and Strauss State wide baking contest. This was a BIG event!

ingredients

  • A. Cake
  • 12 tablespoons cocoa 4 egg yolks
  • 4 tablespoons butter 1 tsp vanilla
  • 5 tablespoons Karo syrup 2 1/2 cups cake flour
  • 1/2 cup boiling water 1 tsp baking soda
  • 1 cup butter 1/2 tsp salt
  • 2 cups sugar 1 cup buttermilk
  • 4 egg whites stiffly beaten
  • B. Icing
  • 1 cup sugar 1/2 cup butter
  • 2 tablespoons cocoa 1 tsp vanilla
  • 1 cup evaporated milk 1 1/4 cups coconut
  • 3 egg yolks lightly beaten 1 cup pecans chopped
  • Line the bottom of three 9" round baking pans with wax paper

    Combine the cocoa, 4 tablespoons butter and syrup; add boiling water, set aside to cool. Cream the 1 cup butter and sugar until light and fluffy. Add yolks one at a time beat well after each addition. Fold in the COOLED cocoa mixture.

    Sift the flour, salt and baking soda; add to the mixture alternately with the buttermilk, mixing well after each addition. Fold in the egg whites. Bake at 350 degrees for 30 to 35 minutes.

    Combine sugar, cocoa, evaporated milk, egg yolks butter and vanilla. Cook and stir over medium heat until thickened (about 15 minutes). Add coconut and pecans. Cool until thick enough to spread between layers and top of the cake.
