Pork and Chicken Adobo
This recipe is a near replica of your Lola Felicia’s - although your Dad says “not” I know the ingredient missing is his mother’s love.
ingredients
- 1 1/2 pounds chicken breast
- 1 1/2 pounds boneless pork (you can make this entirely w/chicken)
- 1 cup white vinegar OR 1/2 cup white vinegar 1/2 cup balsamic or wine vinegar
- 3/4 cup soy sauce
- 1/2 head of garlic minced
- 1/2 head of garlic crushed
- 3 bay leaves
- 1 cup water
- 1/2 cup brown sugar
- 1 tablespoon peppercorns
directions
Rub the minced garlic, ground pepper and one crushed bay leaf into the meat. Heat the oil in a heavy pot, and brown the meat (1/3 at a time). Add the water, vinegar, soy sauce, crushed garlic, bay leaves, and peppercorns to the browned meat (use the same pot or wok). Bring to a boil, cover and lower heat. Simmer until the liquid is reduced add the brown sugar – uncover and continue cooking slowly until the liquid is thickened. Serve with rice.
