ingredients

  • 12 oz veggie burger crumbles
  • 1 packet taco seasoning
  • 2 Tbsp olive oil
  • 1/2 cup minced scallions
  • 2 Tbsp flour
  • 1 cup veggie broth
  • 2 cans pinto beans
  • 2 cans enchilada sauce
  • package of tortillas (wheat)
  • 1 bag shredded cheddar cheese
  • 4.5 oz can green chiles
  • 1 bag Fritos
  • sour cream
  • salsa
  • fresh cilantro

directions

Preheat oven to 375°. Mix burger crumbles with taco seasoning, toss and set aside. Heat oil in a skillet over medium heat. Add scallions and cook 3 minutes, stir in flour and cook 1 minute. Add veggie broth and cook while stirring until smooth (about 1 minute). Add pinto beans and set aside - off of heat. Spray baking dish with cooking spray. Layer: enchilada sauce, tortillas, pinto bean mixture (all), cheese (some), green chiles, enchilada sauce, tortillas, burger crumbles (all), cheese (some), green chiles, enchilada sauce, tortillas, enchilada sauce, cheese. Cover with foil and bake 30 minutes. Remove foil and top with Fritos. Bake uncovered for 15-20 minutes. Top with sour cream, cilantro, and salsa before serving.
