Quiche Lorraine
One of Miss Ida’s best recipes!
ingredients
- 1 9 inch pie shell
- 1/2 cup minced onion
- 3 tbsp butter
- 1 cup cooked, chopped bacon
- 1/2 cup swiss cheese, shredded
- 1/4 cup cheddar cheese, shredded
- 4 eggs
- 1 cup half and half, heated
- 1/4 tsp pepper
- 1/4 tsp dry mustard
- 1/4 tsp salt

Preheat oven to 400 degrees.

Bake pie shell for 10 minutes. Set aside.

Saute onions in butter and spread in pie shell.

Spread bacon and cheese over pie shell.

In a blender, mix eggs, half and half, pepper, dry mustard and salt.

Pour egg mixture over pie shell.

Bake for 25-30 minutes or until set in the middle.
notes
I usually put the filled pie shell on a cookie sheet before baking so I don't make a mess in the oven.
