Pesto Bread

ingredients

  • Pesto:
  • Fresh basil
  • 1 clove of garlic
  • 1/4 cup Parmesan cheese
  • Sea salt
  • Olive oil
  • 1 loaf of Italian bread
  • 1 log goat cheese
  • 2 tomatoes

directions

    Put basil and garlic in the food processor. Chop it up then add Parmesan, salt and drizzle olive oil in as it pulses. Taste for seasoning.

    Slice the bread in half lengthwise. Spread the pesto liberally on each half. Top with chunks of goat cheese and chopped tomatoes. Drizzle a little olive oil over the top, and broil for a few minutes, until the cheese is melty and golden. Enjoy!

Great for using up all the fresh basil from the garden!
