Caramel Nut Candy

ingredients

  • 28 caramels
  • 1/4 cup butter
  • 2 tablespoons half and half
  • 1 1/2 cups powdered sugar
  • 1 cup salted peanuts
  • 2 cups mini marshmallows
  • 1 to 2 cups flaked coconut

    Place caramels, butter, and cream in a 2 quart microwave safe dish. Microwave, uncovered, on medium for 2 minutes, stir. Microwave 1-3 minutes more, until smooth. Stir in Sugar.

    Add Peanuts and Marshmallows. Sprinkle coconut in a 10 inch by 5 inch strip onto 2 sheets of waxed paper. Spoon caramel down the center of the coconut. Using the waxed paper, coat caramel with coconut and roll into 2 ten inch logs. Wrap logs in plastic wrap and chill for 4 hours. Slice into 1/2 inch pieces.
