Broccoli Casserole
A delicious, different way to serve broccoli.
ingredients
- 3 packages of frozen chopped broccoli, cooked in the microwave
- 1 – 8 oz. bag of shredded cheddar cheese
- 1 – box of stove top stuffing (the flavor depends on what I am having with the casserole – for example if I am having turkey then I would get poultry flavored & so on…. )
- 1/2 stick of butter or margarine (or 4 tablespoons of soft margarine in a tub)
- 3 eggs
- 1 – can of Cream of Mushroom or Cream of Chicken soup (once again it depends on what you are serving with the casserole)

Cook the broccoli then transfer it to a large bowl – let it cool just a wee bit while you gather the other ingredients

Mix in 3 tablespoons of the butter

Mix in the soup along with one soup can full of milk
- 4
Mix in the stove top stuffing & spices in the stove top box (reserve about a third of a cup of the stuffing itself to use as a topping)

Mix in the eggs & 2/3’s of the cheese (reserve 1/3 to mix with the reserved stuffing to use as a topping)

Stir very well – it should be fairly wet but if you think it is too dry, just add a wee bit more milk

Transfer the broccoli mix to a 13 x 9 pan that has been liberally sprayed with Pam & set the oven to 350

· Smooth out the broccoli mix then sprinkle the reserved stuffing & cheese on top of the mix…. If you desire more cheese, feel free to sprinkle additional cheese on top

Bake for about 35-40 minutes until the topping is browned – wait a few minutes then you can cut it into squares or just scoop it out.
