Mushroom and Provolone Chicken
ingredients
- 4 skinless, boneless chicken breasts
- 2 cloves crushed garlic
- 3 T. olive oil
- 3 T. red wine vinegar
- 1 T. Cajun-style seasoning (a little less)
- 1 c. chopped green onion
- 1 (8 oz) pkg portobello mushrooms
- 4 slices provolone cheese

1. Preheat oven to 350° F.

2. Combine oil, vinegar and garlic in a zip lock bag. Add chicken and shake it, then place it in pan. Sprinkle with Cajun seasoning.

3. Bake at 350° F for 25 minutes.

4. Remove chicken from the oven and cover with green onion and mushrooms then add a few more sprinkles of oil and vinegar and return dish to over for 15-20 minutes more. Remove from oven and immediately place 1 slice of cheese on top of each chicken breast. Place back in oven until cheese melts. Serve immediately.
