Not your typical slaw...crunchy with lots of flavor and extra bite

ingredients

  • 1 medium cabbage, cored, finely shredded
  • 2 large carrots, peeled, julienne
  • 1 bunch scallions, thinly sliced
  • 1/2 cup minced parsley leaves, optional
  • 3 Fuji apples, peeled, cored, julienne
  • 3 jalapeno seeded, julienne
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon paprika
  • 1/2 teaspoon sage
  • 1 tablespoon kosher salt
  • 1 teaspoon cumin
  • 1 tablespoon roasted sesame seeds
  • 1 teaspoon ground pepper
  • 1/2 teaspoon sesame oil
  • 1/4 cup Asian sesame with ginger dressing

directions

In a large bowl, combine the cabbage, carrots, scallions, parsley, apples and jalapenos. Mix all spices together, along with sesame seeds. Add herbs to slaw and mix well. Add 1/2 of dressing, mix well. Refrigerate for 1 hour, add remaining dressing and mix well.
