Apple Coleslaw by Wolfgang and Oly
Not your typical slaw...crunchy with lots of flavor and extra bite
ingredients
- 1 medium cabbage, cored, finely shredded
- 2 large carrots, peeled, julienne
- 1 bunch scallions, thinly sliced
- 1/2 cup minced parsley leaves, optional
- 3 Fuji apples, peeled, cored, julienne
- 3 jalapeno seeded, julienne
- 1/2 teaspoon nutmeg
- 1/2 teaspoon paprika
- 1/2 teaspoon sage
- 1 tablespoon kosher salt
- 1 teaspoon cumin
- 1 tablespoon roasted sesame seeds
- 1 teaspoon ground pepper
- 1/2 teaspoon sesame oil
- 1/4 cup Asian sesame with ginger dressing
directions
In a large bowl, combine the cabbage, carrots, scallions, parsley, apples and jalapenos. Mix all spices together, along with sesame seeds. Add herbs to slaw and mix well. Add 1/2 of dressing, mix well. Refrigerate for 1 hour, add remaining dressing and mix well.
