Stir-Fry
A popular dinner, you can use whatever combination workds for you
ingredients
- 1 lb skinless, boneless breasts, cut into bite size pieces, marinaded
- 1 lb broccoli florets
- 2-3 chopped scallions
- 1 yellow pepper, cut into bite size pieces
- 1 package sliced mushrooms
- 1 can water chesnuts
- 1 jar baby corn
- 1 package rice noodles
- peanut oil
- 2 tbsp soy sauce
- 2 tbsp duck sauce
- 1 clove garlic
- 1 tbsp dijon mustard
- juice of 1 lemon
directions
Pour marinade over chicken pieces. Cover and refrigerate for up to 48 hours. Cook rice noodles according to package directions and set aside. Heat wok, cook chicken in batches in peanut oil, resrving marinade. Set aside cooked chicken. Stir fry vegtables,start with mushrooms, adding scallions last. Add back cooked chicken, rice noodles and reserved marinade. Stir-fry until cooked and serve hot.
