Mom's Chicken Cacciatore
ingredients
- 8-10 boneless, skinless chicken thighs
- 1/2 cup olive oil
- 1 cup flour
- 1 Tbsp. garlic salt
- 1 Tbsp. pepper
- 1 bunch celery
- 1 onion
- 2 cans Italian stewed tomatoes
- 4 small cans mushrooms or 1 package fresh sliced mushrooms
- 2 small cans sliced olives
- 4 cloves garlic
- 2 cups fresh green beans
- 1 can chicken stock
- 1/2 cup white wine (optional)
- Italian Seasoning to taste
- 1 Bay Leaf

Bread chicken thighs with mixture of flour, garlic salt and pepper.

Brown breaded chicken in olive oil in the bottom of cast iron (very important!) dutch oven and remove. Add chicken stock and wine, bring to a simmer.

Place a layer of chicken, onions, celery, tomatoes, mushrooms, garlic, olives, and green beans. Sprinkle with Italian seasoning and 1 Bay Leaf. Repeat a second Layer.

Remove from stove and put into 350 degree oven for 2 hours or until done.
