Policeman's Delight
ingredients
- 4 chicken breast halves
- 1/2 c butter
- 4 T onion, chopped
- 1 clove garlic, crushed
- 2 T flour
- 1/2 t salt
- 1/4 t pepper
- 2 chicken bouillon cubes
- 2 c hot water
- 1 (8 oz) can new potatoes (or slice real potatoes and cook for full 30 minutes)
- 1/4 c red wine
directions
Saute chicken breasts in butter until brown on all sides. Remove chicken and set aside. Add onion and garlic butter; cook a minute or so. Stir in flour, salt and pepper. Dissolve bouillon cubes in hot water; stir in onion mixture. Cook over low heat until thickened. Return chicken to pan. Cook slowly, about 30 minutes, or until chicken is tender. Add potatoes and wine.
