White Chili

ingredients

  • 1 lb. large white beans
  • 6 c. chicken broth
  • 2 cloves minced garlic
  • 2 med. chopped onions
  • 1 T. oil
  • 1 4 oz. can mild green chilies
  • 2 t. ground cumin
  • 1/4 t. cayenne pepper
  • 1/4 t. ground cloves
  • 1 1/2 t. oregano
  • 4 c. diced cooked chicken breast
  • 3 c. grated monteray jack cheese
  • Salsa and Sour Cream

    Combine beans, broth, garlic, and 1/2 of the onions in a large soup pot. Bring to a boil and then reduce heat and simmer until the beans are soft. (3 hrs.) Add more broth if necessary.

    In a skillet saute remaining onions in the oil until soft.(I just add it to the green chilies without the oil and cook until soft). Add green chilies and seasonings and mix thoroughly. Add the mixture and the chicken to the beans and simmer for 1 hour. Serve topped with cheese, salsa and sour cream.
