ingredients

  • 2 1/2 cups white or navy beans
  • 1 cup ham, diced
  • 1 tsp salt
  • 1/2 tsp. pepper
  • 4 qts. water
  • 8 slices bacon, chopped
  • 4 ribs celery, chopped
  • 2 onions, chopped
  • 4 carrots, chopped
  • 1/4 cup butter or margarine

directions

In a large soup kettle or saucepan bring the beans, ham, salt, pepper and water to a boil. Reduce heat, cover and keep at a slow continuous boil for about 1 hour. Saute the bacon, celery, onions and carrots in the butter or margarine until limp. Add to the beans, stirring well. Taste for flavor and adjust salt and pepper if necessary. Cook for another 30 minutes.
