Blue Ribbon Apple Pie
ingredients
Crust- 2 cups flour
- 1 teaspoon salt
- 1/2 cup butter
- 1/3 cup chilled shortening
- 1/3 cup sugar
- 1 large egg, beaten
- 1 teaspoon white vinegar
- 2 tablespoons ice water
- 2/3 cup dark brown sugar
- 1/4 cup sugar
- 1/4 cup flour
- 1/4 cup lemon juice
- 1 tablespoon vanilla extract
- 1 1/2 teaspoons cinnamon
- 1/2 teaspoon salt
- 4 pounds Granny Smith apples
- 1/4 cup butter
- 3/4 cup flour
- 4 1/2 tablespoons sugar
- 2 tablespoons butter
- 4 1/2 ounces toffee, chopped
- 1 large egg, beaten
- 2 tablespoons water

Mix ingredients except water together. Gradually add water until dough forms ball. Divide dough in half, wrap in plastic and chill.

Preheat oven to 350F. Roll out dough and fit into dish. Cover with foil and bake 10 minutes.

Remove foil and bake 5 minutes longer.
Filling and Streusel

Combine first 7 ingredients. Toss in

apples. Melt butter in a pan and cook apple mixture until softened (10 minutes). Cool.

Make the streusel by combining the flour and sugar. Mix in the butter and stir in the toffee. Then mound apple filling in pre-baked pie crust.

Sprinkle with streusel. Top with dough round and make 5 slits. Brush with egg.

Bake 55 minutes. Cool 1 hour.
