Penne with Sausage and Prosciutto
ingredients
- 2 c. penne
- 2 1/2 c. broccoli florets
- 1/2 lb. hot Italian turkey sausage cut into 1/2 inch slices
- 4 t. olive oil
- 1 red bell pepper seeded, cut into strips
- 1 yellow bell pepper seeded, cut into strips
- 1 red onion, thinly sliced and separated into rings
- 1 c. thinly sliced mushrooms
- 2 oz. prosciutto, cut into thin strips
- 2 garlic cloves, minced
- 1/4 t. crushed red pepper flakes
- 1/4 c. chopped fresh basil
- 1 T. grated Parmesan cheese

In a large pot of boiling water, cook the penne for 6 minutes. Add the broccoli and cook an additional 4 minutes. Drain and transfer to a bowl.

Meanwhile, spray a large nonstick skillet with nonstick cooking spray and heat. Saute the sausage until cooked through 6-8 minutes. Add to the bowl.

In the skillet, heat 2 teaspoons of the oil. Saute the bell pepper and onion until softened, about 5 minutes. Add the mushrooms, prosciutto, garlic and peeper flakes, saute until tender, 3-4 minutes.

Add all to the skillet and heat through. Add basil and cheese and heat through.
