Turkey Curry Salad
ingredients
- 4 cups cooked turkey, diced
- 1 8 oz can pineapple tidbits, drained (save juice)
- 2/3 cup mayonnaise
- 1 Tablespoon Dijon mustard
- 3/4 teaspoon curry powder
- 1/8 teaspoon salt
- 1/4 cup chopped celery
- onion salt
- pepper
- chopped green onion
- toasted almonds
directions
Mix 2 Tablespoons of the pineapple juice into the mayonnaise and add seasonings. Combine turkey, celery, onions and almonds. Pour dressing over and toss to coat.
notes
This is great in pita bread, and is also good combined with pasta for a cold pasta dish.
