Pan Seared Sesame-Crusted Tuna with Ginger Soy Sauce
A quick and easy favorite at Jay and Nanette’s house.
ingredients
- 3/4 cup sesame seeds
- 4 8 oz. tuna steaks, about 1 inch thick
- 2 tbs. vegetable oil
- 1/4 cup soy sauce
- 1/4 cup rice vinegar
- 1/4 cup water
- 2 1/2 tsp. sugar
- 1 scallion, sliced thin
- 2 tsp. fresh ginger, minced
- 1 1/2 tsp. toasted sesame oil
- 1/2 tsp. red pepper flakes

Spread the sesame seeds in a shallow plate. Pat the tuna steaks dry with a paper towel. Use 1 tablespoon of oil to rub both sides of the steaks, then season with salt and pepper. Press both sides of each steak in sesame seeds to coat.

Heat the remaining oil in a nonstick skillet over high heat until just beginning to smoke; swirl to coat the pan. Add the tuna steaks and cook 30 seconds without moving the steaks. Reduce the heat to medium-high, continue to cook until the seeds are golden brown, about 1-1/2 minutes. Using tongs, carefully flip the steaks; cook, without moving the steaks, until seeds are golden brown on the second side, about 1-1/2 minutes for rare or 3 minutes for medium-rare.

Combine the remaining ingredients in a small bowl to prepare the sauce, stirring to dissolve the sugar.

Slice the tuna steaks into 1/4 inch pieces and serve with the sauce.
