Chicken Hoisin
A favorite of Stan and Edie that’s become part of the rotation at Jay and Nanette’s house.
ingredients
- 2 chicken boneless breasts, cut into 1" cubes
- 6 scallions, chopped
- 3 tbs. soy sauce
- 1 tsp. sesame oil (or more as needed)
- rice wine
- 1 inch fresh ginger, minced
- 5-6 cloves garlic, minced
- 2 tbs. hoisin sauce
- peanut oil
- hot sesame oil

Mix the soy sauce, sesame oil, scallions and rice wine and marinate the chicken at least 1/2 hour.

Add peanut oil to the wok and heat to high. Add the ginger and garlic and let brown for approximately 15 seconds. Add the hoisin sauce and mix. Add the chicken with marinade and stir until cooked.

Add a few drops of hot sesame oil, to taste.

When chicken is almost done, add 1/4 cup of rice wine. Reduce slightly for a sauce.

Serve with rice.
