24-hour Salad
Prepare 2 days ahead.
ingredients
- 18 oz. can pineapple tidbits
- 2 eggs, slightly beaten
- 1/4 cup flour
- 1/4 cup sugar
- dash of salt
- 1/4 cup fresh or frozen lemon juice
- 1 cup lightly whipped cream
- 16 marshmallows
- 1/2 cup walnuts
- 1 cup seedless grapes
directions
Drain pineapple tidbits. Save 1/2 cup of the syrup from the pineapple. Mix syrup with 2 eggs. Add in flour, sugar and salt. Cook over low heat until thick and smooth. Stir in fresh or frozen lemon juice. Refrigerate until cool. Fold in lightly whipped cream. Mix in marshmallows and walnuts. Add seedless grapes and pineapple. Cover and refrigerate 24 hours.
