Classic meatball soup

ingredients

  • Small Italian meatballs (made ahead of time)
  • 6 to 8 cups chicken broth
  • 2 T. olive oil
  • 4 garlic cloves, smashed
  • 1 small dried red chili pepper
  • head of endive (use outer leaves; wash and tear into medium pieces)
  • small bow-tie or ancini de pepe pasta (cook ahead, drain, and set aside)
