Italian Wedding Soup
Classic meatball soup
ingredients
- Small Italian meatballs (made ahead of time)
- 6 to 8 cups chicken broth
- 2 T. olive oil
- 4 garlic cloves, smashed
- 1 small dried red chili pepper
- head of endive (use outer leaves; wash and tear into medium pieces)
- small bow-tie or ancini de pepe pasta (cook ahead, drain, and set aside)
