Greek Chicken (Kota)
A delicious chicken recipe with the requisite Greek lemon flavoring:)
ingredients
- 3 TBS Lemon juice
- 1 tsp salt
- 2 tsp oregano
- 3 TBS butter
- 2 TBS olive oil
- pepper
- 1 can tomatoes
- Chicken/whole or pieces
directions

Combine lemon juice & salt and rub all sides of the chicken with this mixture.

Place chicken, skin side down, in a baking dish.

Sprinkle on oregano and dot chicken with butter.

Bake at 400° for approx 30 minutes.

Turn chicken over, drizzle olive oil on it and sprinkle with pepper.

Pour tomatoes over chicken.

Return to oven for another 30 minutes (approximately) or until done.

Baste the chicken with butter often.

Grandpa always added sliced potatoes to this dish. These are added in the last 20 minutes of cooking time and this creates a one pan meal.
