Barbecue Beef Pie
ingredients
- 1 tbsp vegetable oil
- 1 lb lean ground beef
- 1/2 cup barbecue sauce
- 2 tbsp tomato paste
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 box frozen collard greens, cooked and squeezed dry
- 1 tbsp cider vinegar
- 1/4 tsp salt
- 1 box corn muffin mix
- 1/3 cup milk
- 1 egg
- 1/4 cup chopped sweet onion
- 1/4 tsp pepper

Heat oven to 375°. Brown beef in large skillet over medium heat; drain. Stir in barbecue sauce, tomato paste, salt and pepper and cook 3 minutes. Transfer to 10" pie plate.

Heat 1 tbsp oil in skillet and add greens; cook, stirring 1 minute. Stir in vinegar and salt and cook 2 minutes longer. Spoon over ground beef in pan.

For topping, combine muffin mix, milk, egg, onion and pepper and let stand 3 minutes. Drop by spoonfuls over greens, spreading to cover. Bake 25 minutes, until well browned.
