Shrimp Ring

ingredients

  • 2 tablespoons gelatin
  • 1 cup consomme
  • 8 oz cream cheese
  • 3/4 cup mayonnaise
  • 1 cups boiled shrimp, chopped
  • 2 pimentos, chopped
  • 1 cup celery, chopped
  • 1 bottles capers, drained
  • 2 tablespoons onion, grated
  • 1/2 cup chili sauce
  • 2 tablespoons lemon juice
  • 2 tablespoons Worcestershire sauce
  • 1/4 cup chopped parsley
  • 1 teaspoon pepper
  • 2 drops Tobasco
  • French dressing

    Soften gelatin in 1/4 cup consomme. Heat remaining consomme and add gelatin mixture. Cool. In a bowl, beat cream cheese and mayonnaise with a wooden spoon until blended. Add cooled consomme and all other ingredients. Pour mixture into a 2 quart ring mold or fish mold. Chill. Serve in lettuce with French dressing.

    Note: Can substitute boiled crawfish for shrimp.
