Dressing

ingredients

  • 2 cups corn meal
  • 1/2 cup self-rising flour
  • 1/2 teaspoon baking soda
  • 6 eggs (beaten)
  • 1 chopped onion (very finely chopped)
  • buttermilk (about 3/4 of a quart)
  • black pepper
  • ------------------------------
  • 1 large can of chicken broth (if needed)
  • 1 can of Cream of Chicken soup
  • 1/2 teaspoon sage
  • 1 tablespoon salt
  • 3eggs beaten
  • chicken (3 or 4 large pieces)
  • 4 or 5 boiled eggs

    (this can be made the day before)

    Mix cormeal,flour,baking soda, 6 eggs,onion, buttermilk, pepper, and salt. The buttermilk & 6 beaten eggs are the only liquid used to make the cornbread. Make the mixture soupy.

    Bake in the oven in a sprayed baker at 400 degreese until it is brown. About 30 to 40 minutes.

    Next boil chicken & season with salt & pepper.

    Boil the 4 or 5 eggs

    Put the dressing together:

    Crumble the cornbread

    chicken (tear or cut up)

    cut boiled eggs up

    beat the 3 eggs

    Mix together along with the can of soup, sage, broth off chicken, and if you need more liquid you can use the can of broth. I add a little salt & pepper too. Pour into a large deep sprayed pan and cook at 400 degrees til brown. About 40 minutes.

notes

Don't over cook dressing. You want it done but not very firm in the middle.
