Mediterranean Spinach Wrap
This is an awesome wrap. These are really tasty. Try adding anything extra your heart desires. Try adding corn or black beans... you just never know! Shown here with a wheat tortilla, I prefer the spinach, so I have used that one in this recipe. They all work just fine. What ever your preference!
½ head of shredded iceberg or romaine lettuce
1 cup thoroughly washed spinach leaves
8 oz. cream cheese, room temperature
⅓ cup creamy Italian dressing
½ cup feta cheese, crumbled
¼ cup chopped black olives
½ red pepper, sliced in strips
6 oz. smoked turkey, thinly sliced
25-30 fresh basil leaves
1 cup Fontina or Provolone cheese, shredded
Chop up olives.
Combine cream cheese, creamy Italian dressing and mix well.
Evenly spread the mixture over entire tortilla.
Place a layer of shredded lettuce on tortilla shell. Then a layer of spinach leaves and on top of that, a few basil leaves.
Next, Place turkey over the lettuce and spinach mix.
Top with a little feta cheese and black olives.
Lay a couple of red pepper strips over the rest and top with some shredded cheese.
Roll up the tortilla, remember to fold the sides in as well. Wrap the tortilla in plastic wrap and refrigerate for at least an hour.
Before serving; unwrap the tortilla, cut on the diagonal into two or three pieces and arrange on plate.
Wraps can be made a day ahead. Enjoy!
***These wraps are shown with a whole wheat tortilla. I prefer the spinach but the whole wheat will work just fine... so will the flour tortilla.

This is a pretty tasty little wrap. Before you roll these wraps up, after everything has been placed in the middle, you can drizzle some additional creamy Italian dressing on them. These make a great meal as well as a fun appetizer.
