Eggs Los Angeles
First made by Dustin in LA for Mother’s Day, 2006.
ingredients
- 4 corn tortillas, torn in to shreds
- 4 pork sausage links
- 1 small onion, chopped
- 1/2 of a green pepper, chopped
- 4 eggs
- splash of milk
- salt and pepper
- 1 tsp cumin
- 1/4 cup parmesan cheese, grated
- dash of red pepper flakes
- Fresh salsa

In a small skillet, cook the sausages in a little water until just cooked through. Remove immediately and place on paper towels to cool.

In a large skillet, cook the onions and green peppers until just soft, about 7 minutes, in a small amount of olive oil. Remove from onions and green peppers to same plate with sausage,

In same large skillet, add a tbsp. olive oil and once hot add tortilla strips. Cook until just light brown, then add back onions, green peppers and sausage to reheat.

While onions, etc. reheats, beat eggs and milk with a salt and pepper to taste until blended. Add parmesan, cumin and red pepper flakes.

When sausages and vegetables are hot, add blended eggs in to pan and scramble.

Serve immediately with salsa drizzled over the top.
