Sushi Rice Salad
Like sushi but don’t have time to roll it yourself? Why not put it in a bowl and garnish it with slivers of nori. Any kind of time saver is ok with me!
ingredients
- 2 cups cooked short-grain brown rice
- 1/4 cup seasoned rice vinegar
- 1 cup boiled edamame, shelled
- 10 baby carrots, sliced thick
- 3/4 cup cucumber cubes
- 1/4 cups chopped red pepper
- 1/2 cup chopped portabella mushrooms
- 1 tablespoon slivered almonds
- 1 teaspoon black sesame seeds
- slivers of nori for garnish
- Wasabi mayonnaise, optional
directions
Mix all ingredients except nori together and top with pieces of nori. Serve at room temperature with a dab of wasabi mayonnaise if desired.
notes
If you can get your kids to like this... you can probably get them to like rolled sushi. Kids have to start somewhere when it comes to vegetables. Learning when they are young may help their health in the future.
