Hawaiian Smoked Sausage
ingredients
- 3 tbsp veggie oil
- 1 med green pepper cut into lrge chunks
- 1 med onion cut into large chunks
- 2 med tomatoes seeded and chopped
- 1 lb cooked smoked sausage sliced
- 1 tbsp cornstarch
- 1 tbsp ground ginger
- 1 tbsp vinegar
- 1 tbsp soy sauce
- 1/2 cup apricot preserves
- 2 cups pineapple chunks
directions
Add oil to skillet and heat over med heat. Cook and stir sliced sausage, green pepper, onion and tomatoes 5-10 min, until sausage is heated through and veggies begin to soften. Combine cornstarch, ginger, vinegar, soy sauce and preserves; stir into sausage mixture. Stir until mixture is bubbly and sauce begins to thicken. Add pineapple. Reduce heat to low and stir until heated through. Serve over rice.
