Walnut Shrimp Salad
ingredients
- 1 tblsp. butter
- 1 tblsp. soy sauce
- 1 cup walnut halves
- 1 cup diagonally sliced celery
- 1/2 cup sliced green onions
- 1 can (5 oz.) water chestnuts, drained and sliced
- 1 can (11 oz.) mandarin orange segments, drained
- 2 lbs. (3 cups) cooked shrimp
- 1/2 cup bottled sweet-sour dressing (Mom’s favorite is Marzetti’s Country French)
- Crisp salad greens (Romaine would be a good choice)
directions
Melt butter, add soy sauce and walnuts. Stir gently over low heat until walnuts are lightly toasted, about 10 minutes. Remove and cool. Mix celery, onions, water chestnuts, orange segments, and shrimp. Toss with dressing and walnuts, and place on salad greens. Serve with additional dressing, if desired.
notes
Do not add salad dressing combination to greens ahead of time. For some reason, this combination tends to make the greens "wilt" and this is not desirable.
